WASHINGTON (ABC7) — Recently, Pinterest released its official trend report for 2017, which offers a look at what’s expected to make a big impact in the year ahead. The company reviewed more than 13 billion food pins to unlock the hottest dishes, and registered dietitian Valerie Agyeman offered a sampling for Taste Test Tuesday. Follow Valerie on Instagram.
Jackfruit spinach dip
10 oz drained jackfruit
1-8 oz container of lite cream cheese
3/4 c cheddar shreds
1/2 c lite ranch dressing
3 c fresh spinach, chopped
2 tablespoons green onions, diced for garnish
Preheat oven to 350 F, and get out a shallow baking dish (9" round or 8x8 square)
Drain jackfruit, then shred by hand into mixing bowl
Add cream cheese, cheddar, ranch dressing, to the jackfruit and mix until combined. Fold in spinach until combined, then spoon mixture into baking dish.
Bake the dip for 30 minutes, it will be bubbling around the edges. Once it is done, cool for 5 minutes on a cooling rack, then garnish with green onions. Serve with chips or veggies and enjoy!
Honey mustard roasted chickpeas
1 1/2 c cooked chickpeas or 1 can chickpeas drained and rinsed.
1/4 c yellow mustard + 3 Tablespoons maple syrup OR 1/4 c honey mustard dressing
Sea salt to taste
Preheat oven to 400
In a small bowl, whisk together the mustard and maple syrup.
Add misture to a large bowl with chickpeas and mix well. You want to make sure that all the chickpeas are coated in the honey mustard.
Spread the chickpeas onto a lined baking sheet.
Sprinkle with sea salt.
Bake for 45-55 minutes. Turn the chickpeas around every 10 minutes to prevent burning
