DC's Soupergirl goes national on ABC's "Shark Tank"
WASHINGTON (ABC7) —
Now that she’s taken the DMV’s taste buds by storm, Sara Polon, better known as "Soupergirl," is going national on ABC’s “Shark Tank.” But before she swims with the sharks, we dove into one of her favorite fall bowls.
Gingered Sweet Potato Soup
Base: makes 7 cups
2 teaspoons canola oil (as needed)
1 medium leek, white part only, cut in half lengthwise, rinsed well, thinly
1 medium carrot - chopped
2 pounds sweet potatoes, peeled and cubed
One 1 inch piece of fresh ginger root, peeled and finely chopped
4 cups vegetable broth or water
Salt to taste
Cilantro for garnish
1.Heat the oil in soup pot over medium-high heat.
2.Ad the leeks and carrot and cook, stirring, until they begin to soften - 2-3 minutes
3.Stir in the sweet potatoes and chopped ginger root
4.Add the broth and bring to a boil. Cover the saucepan, reduce the heat to low, and simmer until the sweet potatoes are soft - about 30 minutes
5.Using an immersion blender, puree until smooth. If it is too thick add water. Salt to taste. Before serving add more ginger for extra sharpness. Top with fresh cilantro.
