Makes about 1 cup
1 cup. sugar
10 tablespoons liquid egg yolk (2/3 cup)
Juice and zest of 1 lemon
5 tablespoons butter, cut into cubes
1. Cook sugar, egg yolk, lemon juice and zest in top of a double boiler over simmering water until thickened - 20-30 minutes
2. Stir in butter and chill.
