On Glenburnie Farm in Spotsylvania, John Biscoe's greenhouse is filled with microgreens. Simply, microgreens are seedlings of vegetables and herbs like arugula, basil and red Russian kale.
Though 90% of his sales go to chefs, Biscoe says consumer demand is up after USDA and University of Maryland researchers discovered how much nutrition is packed into the tiny seedlings.
Researchers measured levels of vitamin E, K and C, as well as beta carotene and lutein in 25 types of microgreens.
"The nutritional level of young seedlings are 4-6 times higher than their mature counterparts which is so impressive," noted researcher Zhenlei Xiao.
Researchers found that radishes, red cabbage, cilantro and amaranth scored highest overall. But each one is considered a super veggie.
